What you’re gonna need:
- 8 Boneless, Skinless Chicken Thighs
- 1-Pint Grape Tomatoes
- 1-2 Red Chiles, Sliced (no need to remove seeds) or Jalapeños (definitely remove the seeds)
- 15 Large Basil Leaves torn up (or 1-2 tsp dried basil)
- 1 T Olive Oil
- 1 tsp Sea Salt
- 1⁄2 tsp Black Pepper
- Arugula or Cooked Brown Rice
What you’re gonna do:
- Preheat oven to 425 degrees
- Arrange chicken pieces in a single layer in a large rimmed pan or baking dish (I use my 12 inch cast iron skillet)
- Topple in the tomatoes. Scatter everything with the chile slices and basil leaves.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Bake until chicken is cooked thru; about 45 minutes to an hour.
- Serve over fresh arugula or cooked brown rice.
