Oven Baked Steak Fajitas

What you’re gonna need:

  • 8 Boneless, Skinless Chicken Thighs
  • 1-Pint Grape Tomatoes
  • 1-2 Red Chiles, Sliced (no need to remove seeds) or Jalapeños (definitely remove the seeds)
  • 15 Large Basil Leaves torn up (or 1-2 tsp dried basil)
  • 1 T Olive Oil
  • 1 tsp Sea Salt
  • 1⁄2 tsp Black Pepper
  • Arugula or Cooked Brown Rice

What you’re gonna do:

  1. Preheat oven to 425 degrees
  2. Arrange chicken pieces in a single layer in a large rimmed pan or baking dish (I use my 12 inch cast iron skillet)
  3. Topple in the tomatoes. Scatter everything with the chile slices and basil leaves.
  4. Drizzle with olive oil and sprinkle with salt and pepper.
  5. Bake until chicken is cooked thru; about 45 minutes to an hour.
  6. Serve over fresh arugula or cooked brown rice.
